SUMMER RECIPE : STRAWBERRY+MINT+CHICKEN SALAD

Summer is just behind the corner, the sun is shining and days by the sea are not so far anymore. Inspired by this feeling we propose you today a delicious recipe with seasonal veggies and berries. And this salad has so many plus that you will get crazy about it!

First of all, it’s light and delicious, that means who of you made some guilty pleasures during the winter, can get in shape much easier with this recipe.

Happy mood and summer feeling are guaranteed with such a delicious mix as strawberry and mint!

It’s super easy and quick to made!

It would be perfect for a picnic in the park and also instagram ready with such a vivid and bright colors!

WHAT DO YOU NEED?

Salad mix ( valerian, lettuce, mini spinach, rucola )

Cucumber

Onion

Strawberrys

Mint leaves

Chicken

Feta cheese

Seeds & Nuts

Olive oil

Lime

Salt

As I told you before it’s extremely quick and easy to made, just about 20 min and you will have your delicious meal ready.

First, grill the chicken, you can do it on grill or in a pan with a bit of olive oil and some aromas as rosemary and oregano if you like. Also you can add the salt, but of course to make it healthier skip this step is better.

Meanwhile your chicken is getting ready, put in a bowl a mix of small leaves of salad  and cut all the other veggies as cucumber and onions.

Then add  strawberries and some mint ( do not exagerate ) and then your chicken and small cubes of feta cheese.

Now it’s time of dressing, so olive oil, salt, lime juice and seeds! Voila!
